This recipe is from JaNae Worthen who won the Cache Valley Cheese recipe contest with it. We all gave it a huge thumbs up, including Allison which is high praise indeed.
6 chicken breast halves, pounded so they are flat
3/4 bag crushed tortilla chips
1/2 tsp garlic powder
1/4 tsp pepper
1/2 c honey
zest of 2 limes and juice of 1 lemon
3/4 c sour cream
1/2 c cilantro chopped
3/4 c mango salsa
6 slices Monterey Jack Cheese
1. Crush tortilla chips in bag with a rolling pin. Add garlic powder and black pepper and shake it to mix it up.
2. In pie pan, mix zest and juice of one lime with honey.
3. Dip chicken into honey mix and then dip it into the chip mix. Lay on a sprayed pan.
4. cook at 400 degrees for 15-20 minutes or until almost done.
5. Remove from oven and turn the broiler to low. Mix sour cream, and zest and juice of second lime.
6. Place atop chicken breasts, cilantro, lime sour cream, mango salsa and finally the cheese.
7. Broil until cheese is golden brown and chicken is cooked, about 5-7 minutes.
