Mexican Haystacks


This was my Grandma Drechsel's recipe and one of my kids' favorites. My Grandma seemed to make it whenever we would visit because it was easy to feed a crowd of kids. Jeremy likes the leftover bean mixture to eat with chips for his midnight snack.

Cook 1 lb hamburger with 1 chopped onion. Drain. Add 2 14.5 oz cans refried beans, 1 14.5 oz can crushed tomatoes, 1 package taco seasoning. Heat, stirring often.

Serve over crushed tortilla chips. Top with: shredded lettuce, shredded cheese, corn, tomatoes, sour cream, avacado, ranch, salsa, pepper and anything else that sounds good.
